Sweet Potato Chocolate Brownie

You may like to use this as a hidden vegetable lunch box snack for the kids, a fibrous treat for gut health, or a sweet treat after dinner (or the afternoon!) without the high sugar kick.

This is a staple in my family’s fav

Ingredients:

• 2 eggs

• 1 tsp vanilla essence

• 1 cup of mashed sweet potato

• ¼ cup maple syrup

• ¼ - ½ cup of melted butter or ghee

• ½ cup gluten free flour (or ¼ gluten free and ¼ buckwheat flour)

• ¼ cacao powder

• ¼ tsp sea salt

Optional: ¼ - ½ cup dark chocolate chips, chia seeds or hemp seeds

Method:

  1. Preheat oven to 180°C

  2. Mix dry ingredients in one bowl

  3. Whisk wet ingredients in another

  4. Combine

  5. Scoop in to a baking pan, and bake for 15–20 minutes.

  6. Cool and enjoy
