Balanced Bites Cupcakes

A nourishing twist on a classic treat — made with wholefood ingredients and rich cacao powder for that deep chocolate flavour (and a little antioxidant boost too )

Perfect for when you want something sweet without the blood sugar crash!

Ingredients:

• 1 cup gluten free plain flour (or ¾ cup gluten-free flour and ¼ cup buckwheat flour)

• 2 tbsp cacao powder

• 1/3 cup maple syrup

• 1/4 cup melted coconut oil or butter

• 1 egg

• 1 tsp vanilla extract

• 1/4 tsp baking soda

• Pinch sea salt

• 1/3 cup dark chocolate chips

• Splash of coconut milk

Optional: 2 tbsp chia seed and 3 tbsp hemp seeds

Method:

  1. Preheat oven to 180°C

  2. Mix dry ingredients in one bowl.

  3. Whisk wet ingredients in another

  4. Combine to form a soft dough — add a splash of milk if needed.

  5. Fold in choc chips.

  6. Scoop in to a cupcake pan, and bake for 10–12 minutes.

  7. Cool and enjoy
