Chocolate chia pudding

Need a quick and easy chocolate filled dessert or lunchbox snack? Look no further than a chocolate chia pudding.

Chia seeds are a great source of fibre, while raw cacao powder is a powerful antioxidant. A non-dairy, sugar free chia pudding provides a nutritious alternative to processed sugary snacks and desserts.

Health food doesn’t need to be complex or time consuming. We often forget that all we need to do is go back to basics to achieve optimal health.

The below recipe feeds about 6 people, and takes approximately 10 minutes to mix.

Ingredients:

  • 3 cups of soy milk (or your choice of non-dairy milk)

  • 2 cups of organic raw cacao powder, or enough to fulfil your chocolate needs

  • 2 tablespoons of honey

  • 2 cups of chia seeds (or less/more depending on how thick you like your ‘pudding’)

  • Optional: mint leaves, cinnamon, berries or banana, or add fresh when serving. I usually add brazil nuts, hazelnuts and pecans.

Method:

  • Mix milk and honey into a bowl

  • Add cacao powder until you’re happy with the chocolate strength, and mix well

  • Add chia seeds

  • Allow to rest for 10-15 minutes to assess thickness (will appear thicker as the chia seeds absorb the milk)

  • Put in fridge overnight
