Quinoa Flake Porridge

Breakfast is a meal that can set us up for the day, but sometimes we skip this as we don’t have time. So here is a 5 minute quinoa porridge to ensure you begin the day on a good note.

Quinoa is a nutrient dense food, full of fibre and protein. Fibre is important for optimal gut function, and protein will be used for energy (and is essential for so many other body processes!)

The below recipe can feed approx 5 people, or you can make this and re-heat it each morning. It takes 1 minute to mix, and 5 minutes to cook.

Ingredients:

  • 1-2 cups of quinoa flakes (depending on how much you’d like to make, remember a little goes a long way)

  • Water (filtered is best)

  • 1-1.5 cups of raw cacao powder

  • 5 brazil nuts & a handful of pecans - or nuts of your choice

  • A splash of soy milk and a cut up banana to serve

  • Optional: honey, cinnamon, berries, or add fresh when serving

Method:

  • Add quinoa flakes to a pot, and just cover with water. Simmer on the stove for approx. 5 mins (quinoa absorbs water quickly so keep an eye on it if you need to add more)

  • Mix until it turns thick, then you may need to turn the stove off

  • Add nuts and mix in

  • Add raw cacao powder and mix in

  • Serve with your choice of options

  • Put in fridge overnight and can re-heat a portion of this each day for convenience
